Introduction to Land Navigation

  • This course covers everything from establishing pace count to map reading (topography, symbols, grid coordinates, etc.) to basic compass use (shooting an azimuth, calculating declination, etc.). Once that foundation is achieved, students will participate in several pre-set navigation courses to test their knowledge under the guidance of COS instructors.

Percolation Tincture Workshop

  • Designed for those ready to advance their skills in herbal medicine, this workshop focuses on one of the most efficient and potent extraction methods—percolation tincturing. Students will gain hands-on experience crafting their own remedies, while learning the step-by-step process needed to confidently replicate these techniques at home. As with all our herbal workshops, this course blends practical skill-building with a biblical appreciation for God’s provision through creation.

Loom Your Own Hat

  • In this cozy and hands-on workshop, students will learn to use a round loom and knit their own hat from start to finish. It’s a perfect introduction to the world of fiber arts, ropework, and handmade clothing. The process is beginner-friendly and easy to replicate at home, and the relaxed setting fosters both creativity and fellowship. Edible and Medicinal Plant Walk

  • In this immersive workshop, students will explore the foundational principles of plant identification and discover the abundance of edible and medicinal species within our local landscape. Through guided field instruction, participants will learn to recognize key characteristics, discern safe and sustainable harvesting practices, and understand the practical uses of common wild plants. In the second half of the course, students will gain hands-on experience preparing simple herbal remedies in the field, equipping them with the knowledge and confidence to continue practicing and applying these skills beyond the class.

Primitive Bowdrill Fire

  • In this immersive workshop, students will explore the foundational principles of firecraft and gain a deep understanding of the essential components of primitive fire-making. Each participant will carve their own bowdrill kit and receive step-by-step, hands-on guidance to successfully produce fire using traditional methods. By the end of the course, students will be equipped with the tools, knowledge, and confidence needed to continue practicing and mastering the bowdrill technique at home.

Processing Livestock from a Biblical Perspective

  • In this workshop, students will gain a biblical understanding of animal stewardship, humane harvesting, and the responsibility of using God’s creatures for food. Through guided instruction, participants will learn the full process of taking an animal from field to fork—covering ethical culling, respectful handling, field dressing, and practical butchering techniques.

    Throughout the course, we will approach each step through the lens of Scripture, recognizing that dominion and compassion are not opposites but twin aspects of faithful stewardship (Gen. 1:28; Prov. 12:10). By the end, students will have not only the practical knowledge to process livestock responsibly, but also a deeper gratitude for the provision, humility, and dependence that come from participating in God’s created order.
